Red Velvet Protein Brownies

I altered my amazing Chocolate Protein Brownies recipe for this!

The beetroot will give the beautiful colour but it won’t taste like it 😊

1 1/2scoops 100% Whey Protein Professional CHOCOLATE
30g stevia
60g cocoa
1 1/2 tsp baking powder
2 tbsp macadamia nut oil
200g beetroot purée
2 eggs 80g oat flour

Mix together all the dry ingredients first then add in the oil, beetroot & eggs.

Pour into and spread out in a lined Perspex baking dish.

Bake for about 20 mins at 180 degrees, longer if you like it firmer, like cake.

Top with Greek yogurt like I did, or some vanilla protein mixed with a little water mixed to an icing consistency.

Makes 16.

Below is for one square, without icing/yogurt.

Labneh

Its called many different things, but it’s basically strained yogurt.

I make it with Greek yogurt and it is so versatile! Use it on pizza, nachos, in salad or desserts like cheesecake.

It’s just like cream cheese.

So simple to make;

Line the inside of a colander or large seive with a cheesecloth, clean tea towel or some disposable cloths.

Place this in a lage bowl so it’s suspended, you need to liquid to separate from the solid labne.

Take your desired amount of Greek yogurt (or soy, coconut, natural – I havent tried them so if you do I would love to hear how it goes) and pour/spoon it into the cloth. You can stir in a pinch or salt first if you desire.

Tie the cloth corners together in a bunch and put in the fridge to drain for a day or two depending on how solid or soft you want it.

Ive got a few recipes coming that use this labneh but intil then, try it with honey, or on meat!

Snacks

Ok, a few more snacks for you to try;

• Cottage cheese, you can have this a few ways, I like it with chopped strawberries, cinnamon and Natvia. You can mix in chocolate protein powder and chopped bananas and/or peanut butter.
• Boiled eggs
• Dip; Greek yogurt with garlic, chives, parsley and lemon juice.
Greek yogurt with chilli, mint and chives.
Greek yogurt with sundried tomatoes, black olives, oregano and garlic – may need a blender.
The possibilities are endless for dips made with Greek yogurt. Serve with carrot sticks, celery, capsicum strips, baby Roma tomatoes.
• Cheese sticks (fair bit of fat so not often)
• Protein shake

Hope this helps everyone who finds it hard to eat healthily 🙂
